There are good days and bad days- days when you are bursting with positive energy and days where you can barely get out of bed. And of course days when you have no idea what to do
The past couple of weeks I have been feeling low; health issues, the changing weather, and a general feeling of exhaustion tend to do that to you.
A great way, I have discovered, to battle the gloom, is to inspire yourself, do things of your interest and enjoy doing that. For me, reading, cooking and gardening is the cure.
Baking has been scientifically proven to have therapeutic effect against anxiety, depression and uneasiness. So anytime, I feel the grey looming over, I get baking! The instant (sweet) results are very satisfactory and gratifying.
All of my children prefer the slightly green, half ripened bananas. But the bananas ripen so fast, before I know it, there’s a bunch of overripe bananas in my kitchen and no takers. Not one to waste food, I try to make something that is going good with these abandoned bananas. And what is better than a freshly made banana bread with lots of nuts!
I decided and immediately baked a fresh loaf of banana bread!! Treating myself with a slice of this and a hot cup of tea coupled with one of my favorite books cheered me right up. It really helped me to come out from carcass of gloom!! So try it and be happy friends!!
Serves: 5
Preparation time: 20 minutes
Baking time: 45-50 minutes
Ingredients
- 1 cup all purpose or refined flour
- 1/2 cup rolled oats
- 4-5 tbsp salted butter
- 3-4 tbsp honey
- 3 over ripe bananas
- 2- eggs
- 1 tsp baking powder
- 1 tbsp raisins
- 80-100 gms broken walnut
- 1/2 tsp Vanilla essence
Method
- Take butter (at room temperature) and eggs together in a bowl and mix it with the help of an electric hand mixer.
- Mash the bananas with the help of a fork and keep aside.
- In a separate bowl mix flour and baking powder properly. Add this flour and oats in the butter and egg mixture and churn thoroughly.
- Add honey and vanilla essence and again mix to make the mixture light and fluffy.
- Sprinkle some flour over walnuts and raisins (to avoid the nuts on the base of the bread) and add in the batter.
- Take a medium sized bread tin, grease it with butter and sprinkle some flour over it by dusting properly.
- Pour whole batter into tin, pat it and bake at 190- 200β in a preheated oven for 45-50 minutes. Test it by inserting a knife or a toothpick into the center.
- Remove it from oven and shift the bread tin on the wire rack for cooling. After 10-15 minutes de-mould it, cut in equal slices and serve π.
